Homemade granola bars

Here's a recipe for one of my favorite snacks... apricot-cranberry granola bars. These are so much tastier than store-bought granola bars (they are also free of oil/butter and don't contain lots of strange additives that I can't pronounce).

-9 medjool dates
-6 dried apricots, chopped
-1/4 cup dried cranberries
-2.5 cups whole rolled oats
-1/3 cup honey roasted slivered almonds
-1/2 tsp cinnamon
-1/4 cup honey
-1/4 cup maple syrup
Start by putting the medjool dates in your food processor and pulse them.  Add in a tiny bit of hot water while you pulse, so you ultimately get a sticky paste which will hold the granola bars together.
Then combine the rest of the ingredients in a mixing bowl with the date puree.
And stir it all up.
Then pound it thin on a baking sheet lined with foil and pop it in your freezer for 30 minutes so it all holds together.
Finally, cut up the giant granola square into pieces and wrap them up for easy snacks to-go!
If you want your granola bars to have a toasty flavor, pop the baking sheet into the oven for 5 to 10 minutes at 300 degrees before sticking the pan into the freezer.

Store your snacks in the fridge after wrapping them so they stay extra-fresh and hold together well. Enjoy!
